The concept strips everything back to one set: Hikiniku to Come Set ($27.9) — three charcoal-grilled hamburgs made from 100% freshly minced Japanese beef, free-flow rice, miso soup, and a raw egg. Everything is grilled fresh, and served right in front of you.

2. Torikizoku

Torikizoku Singapore

Japan’s biggest yakitori chain — over 600 locations — chose VivoCity for its Singapore debut, and every skewer is $3.9.

At 174 seats, this is Torikizoku’s largest restaurant worldwide. But more importantly, the menu runs through the full yakitori spread at a flat $3.9 per two-skewer plate, grilled to order. The Negima (chicken and spring onion) and Tsukune (chicken meatball with tare) are our favourite picks, but you can’t go wrong with their Top 5 recommendations (shown on the menu). 3. Sio Pasta

The casual arm of a Michelin-recognised Tokyo restaurant is now at Raffles City.

Fresh pasta from $13.8, Sio Aoyama, the founder of Sio Pasta, has held a spot in the Michelin Guide Tokyo for six consecutive years. The Singapore outpost is its first overseas address, bringing over 10 Japanese-Italian pasta dishes over.

4. Barrel Story of Hibiki

The first Hibiki whisky dining concept outside Japan opened at Telok Ayer last year.

Chef Sho Naganuma runs a fire-driven izakaya menu of over 60 dishes. The Signature Dinner Set ($68) covers the spread — braised pig trotter spring roll, A5 wagyu fat-glazed white corn, and stuffed chicken wings. Meanwhile, whisky flights start from The Story of Hibiki ($38): three expressions across highball, rock, and mizuwari.

5. Loca Niru

Eight courses inside a 140-year-old heritage house — the most underrated Japanese restaurant that opened end of last year.

Chef Shusuke Kubota trained through Japanese and French kitchens before opening inside the House of Tan Yeok Nee. The 8-course tasting menu ($298) changes with Japan’s seasons and works in Southeast Asian ingredients where they fit. Sake or wine pairing adds $188.

6. Jiin Omakase

The Les Amis Group’s newest restaurant opened at Shaw Centre, Orchard, built around peak-of-season Japanese seafood and the inn-hospitality concept of omotenashi. Lunch runs from $138 dinner from $288, with a Chef’s Menu at $488 for live seafood flown in that week.
