Here’s what to expect
The Cable Car Sky Dining experience starts with pre-dinner drinks (choice of wine or mocktail) and amuse-bouche at Dusk @ Mount Faber Peak, setting a relaxed tone before you board the cable car.
Once onboard, you’re treated to a carefully curated 3-course menu crafted by internationally acclaimed Chef Mathew Leong, following his sold-out pop-up at Dusk earlier this year.
The Kombu Cured Tuna Chutoro with horseradish buttermilk vinaigrette, jalapeno, löjrom, and brassicaceae had fresh and zesty flavors, easily earning its spot as my favourite dish of the night.
On the other hand, the Open-fire Grilled Japanese Wagyu Sirloin, served with Yuzu Kosho beef jus, beef fats, and allium, was a little on the fattier side but incredibly rich and tender.
After landing, the night wraps up back at Arbora with desserts, which was the Oolong Tea Milk Ice Cream with citrus, lavender, and Sichuan pepper crisp, completing the full-circle experience. The tea flavour was quite prominent, and the citrus puree added a tangy finish to it.
At the end of the night, we were given a Bell of Happiness to write our wishes to hang on the fence at Mount Faber Peak. I thought this was an extra sweet gesture to end off date night.
So… was it worth it?
What makes this date truly special is how intimate it feels. It’s like having your own private dining room in a restaurant, but up in the sky.
While $138 per pax might be slightly pricier than what you’d get at restaurants, you really can’t find an experience like this anywhere else.
