Ever wondered what animal grub taste like?

In collaboration with 20 like-minded F&B brands, Mandai Wildlife Group has organised the Choose Good Food Trail, to design exclusive food items and grocery bundles inspired by the diets of wildlife. For instance, a quinoa salad that features baby corn and cherry tomatoes, inspired by the Malayan Sun Bear’s diet. The food trail is part of their Choose Good with Mandai, which focuses on the intrinsic value of wildlife to raise awareness of the symbiotic relationship between people, nature and the world.

Scattered across the island, here are the seven best dishes we recommend from the Choose Good Food Trail. The campaign is ongoing from 21 October to 25 November.

1. Mandai Hero Bowl from Grain Traders

Did you know that Asiatic Black Bears have a really balanced diet?

To emulate their diet, Grain Traders came up with the Mandai Hero Bowl. It consists of brown rice, sous vide chicken, roasted root vegetable, mixed tomato salad, cucumber pickles, roasted mixed nuts, coconut curry. While brown rice, sous vide chicken and salad may sound bland to many (including me), you’d be surprise by how flavourful it was.

This dish is only available from 11am.

2. Raw Mixed Berries Cheesecake from Afterglow

Have you ever had a cheesecake without cheese?

Afterglow’s Raw Mixed Berries Cheesecake is entirely plant-based, substituting cream cheese with cashew nuts. The results — crumbly and nutty from the blended cashew nuts, and tart and refreshing from the raw berries. Just imagine a slightly more frozen acai, but with a lighter flavour.

Located at Chinatown, Afterglow has been championing Farm-to-Table dining since 2013. They’re committed to using regionally-sourced whole foods. All their dishes are completely plaint-based, free from gluten, preservatives, refined sugar and artificial flavourings.

3. Cucumber & Double Mint Sorbet by Birds of Paradise

Inspired by the Sumatran Orangutan, Birds of Paradise has created the Cucumber & Mint Sorbet. It’s refreshing, grassy and minty; the perfect dessert after a heavy meal.

The gelato boutique has always been using natural and botanical ingredients, creating unique and exclusive flavours such as Pandan, Strawberry Basil and Lemongrass Ginger.

4. Bear Necessities by Three Buns

Three Buns commitment to using the freshest possible ingredients allowed them to be touted as one of the best burger joints in Singapore. On top of importing sustainably-sourced beef and lamb from Australia and New Zealand, their new dish for the wildlife food trail features plant-based chicken.

While the texture is a little off, the flavours were well replicated. The lightly-seasoned patty was also complemented with sweet and malty flavours from the dressing and the bun.

5. Strawberries & Blueberries Granola by Dearborn

The first granola speciality cafe in Singapore, Dearborn has offered the Strawberries and Blueberries Granola, inspired by the diet of the Pancake Tortoise.

Dearborn has always been involved in sustainability efforts. “It’s all about keeping it sustainable and getting ingredients organically,” Chef Christopher Kong, the founder of Dearborn, said. Aside from their collaboration with Mandai Wildlife Group, the granolas are packed in 100% recyclable paper bags.

6. Garlic Seafood with Pesto Pasta by GoodFoodPeople

We’ve heard of plant-based beef, pork and chicken a lot. But there hasn’t been much buzz about plant-based seafood.

GoodFoodPeople, the first and largest healthy food chain in Asia, has launched their Garlic Seafood with Pesto Pasta, featuring plant-based seafood. 

In addition to this dish, which was created for Mandai Wildlife Group’s Choose Good Food Trail, GoodFoodPeople also carries plant-based alternatives from the various organisations: Impossible™, OmniFoods, Beyond Meat, and more.
