Singapore’s culinary scene is about to witness an extraordinary fusion of flavours and gastronomic creativity. On Saturday, 27 May 2023, Ember Beach Club at One&Only Desaru Coast will host the second edition of the highly anticipated EMBER CURATES series.

This unique event brings together the renowned Michelin-starred Chef Andrew Walsh and the celebrity chef and MasterChef Singapore judge, Bjorn Shen. Together, they will present an unforgettable four-hands dinner showcase, promising a captivating culinary journey that marries Middle Eastern and Japanese izakaya-inspired cuisine against the enchanting backdrop of Ember Beach Club.

The Great Artichoke & Catfish Izakaya smash-up

The beachfront restaurant of One&Only Desaru Coast, Ember Beach Club, conceived by Chef Andrew Walsh, will be transformed into a haven for culinary enthusiasts — a fusion of Middle Eastern flavours from Chef Bjorn Shen’s Artichoke Restaurant and seafood-inspired creations from Chef Walsh’s Catfish Izakaya. Hence, its name — The Great Artichoke & Catfish Izakaya.

The feast begins with tantalising snacks, such as Kampachi Taco with Yuzu Truffle Dressing, the smoky Eggplant Katsu, and the savoury Scamorza Cheese with Pickled Daikon and Shiso Dust. Meanwhile, the Mezze section offers unique dishes like the standout grilled chicken skin skewer served with yuzu cosh, uni “taramasalata,” and sweet corn.

As the culinary journey continues, you can indulge in Chef Walsh’s Japanese Wagyu Striploin with Watercress Salad and Wasabi, while Chef Shen prepares the Fried Cauliflowers with Walnut Muhammara and Pomegranate. Embracing the essence of both establishments, the highlight of the evening is the Grilled Unagi and Foie Gras Donabe. The dish is crowd favourite at Catfish Izakaya, elevated with tabbouleh made with native Malaysian herbs and vegetables from Artichoke.

To conclude the meal on a sweet note, you will savour a delectable dessert, a blend of Milk, Miso & Malt crafted by both chefs to tantalise their taste buds.

Complementing the exquisite cuisine are expertly crafted drinks, such as the Tokyo Mule by Chef Walsh, made with vodka, spiced ginger, and lime, and the Kadikoy by Chef Shen, featuring white rum, yuzu, and salted kelp.
