Helmed by Michelin-star chef Mauro Colagreco, Capella Singapore’s latest jewel, Fiamma, opens to offer up a repertoire of authentic Italian dishes.

Fiamma stands for ‘flame’ in Italian. It represents Chef Colagreco’s passion for cooking and the warmth and comfort that is found in the Italian spirit of family dining.

The menu pays homage to his grandmother’s cooking. However, underneath the familiar appearance of the dishes lays bold new flavours.

Polpette ($24) features traditional meatballs, but they’re cooked in an earthy, spicy basil-ginger tomato sauce and chilli.

Meanwhile, Tartufo ($36), is a pizza designed with smoked scamorza cheese cream, Tuscan salami and fresh black truffle.

Ciopinno- clams, langoustines, scallops, crab claw, coriander, seafood broth

Classics are also on the menu, such as the Ciopinno ($72), a seafood stew with origins in San Francisco, America.

End the meal with a creamy and rich Tiramisu ($20), served in a elegant round dish, or the Meringa Cotta ($16), a slow-baked meringue with red berry sauce.

Fiamma is a reflection of home and its interior is designed to allow guests a different experience in each part of the restaurant. Every area from the Den, the Oven Salon, the Kitchen Chamber, the Living Room, the Terrace to the Private Table, offers a different experience.
