Looking for a new destination cocktail bar to visit in Singapore? The latest addition to the Pan Pacific Singapore hotel, PLUME is an opulent bar is a celebration of the indigenous birds of Singapore.

Adhering to the avian theme, the bar is adorned with contemporary art deco interior featuring shades of maroon, emerald and gold accents. The bar offers a sophisticated menu of carefully crafted cocktails, curated in collaboration with bar consultants, Compound Collective and head mixologist, Ong Jun Han.

Each drink is inspired by one of 12 iconic native birds of Singapore, with unique characteristics and flavour profiles that will delight even the most discerning palates.

For a fruity and refreshing option, try the Pink Necked Green Pigeon ($25), while the Asian Koel ($24) offers a more complex and herbaceous flavour. The Blue-tailed Bee-eater ($23) is light and refreshing with a hint of sage and saline, and the Chestnut Winged Cuckoo ($25) is an opulent libation with rich dark rum and tangy notes of Ceylon Arrak.

For something truly unconventional, try the Banded Woodpecker ($26) made with Green Ant Gin and served with a mist of oak moss.

Non-alcoholic options are also available, such as the luxurious Soar ($17), a mocktail with refreshing jasmine, honeysuckle and a hint of honey.

Pair your drinks with the appetisers on the menu, which offer elevated iterations of popular Singaporean dishes. Also inspired by the native birds and local flavours, Executive Sous Chef Thorsten Killian’s new dishes include Bird Food ($15) — crispy lotus root chips topped with in-house made salmon floss and whipped onion cream, and Perched Together ($18) — chicken rendang croquettes with crispy leeks, creamy rice and egg purée encased within an eggshell.

For a luxurious twist on a beloved Singaporean classic, try Bulbuls ($35), featuring three tender wagyu beef satay skewers with refreshing cucumber-pineapple slaw and delectable peanut dipping sauce. Lastly, indulge in the Pink Flamingos ($24), an elevated version of the Indian street food Pani Puri. The crispy fried dough ball is stuffed with tiger prawn tartare and topped with rich shellfish foam, crispy cracker and wasabi nuts.
