For centuries, gyoza has been overshadowed by ramen. They’ve been oppressed and looked down upon as a mere side dish. But, this has all come to an end, with the sprouting of restaurants that specializes in gyozas such as Gyoza King and Gyoza Bar. And now, Gyoza-ya, located in the basement of ION Orchard that has a wide assortment of flavours to choose from, wrapped with an automated dumpling wrapper.

Automatically-wrapped Dumplings

The different fillings include: Pork, Vegetable and Mushrooms at S$4.8 for 5 pieces. You can also top it with Mentaiko, Truffle Aioli, Cheese, Mala and Curry with cheese. There’s quite a unique one which I don’t recall seeing the last time I was there, but it’s the Pan-Fried Takoyaki Gyoza.

Gyoza-ya imports their dumpling skin, which has a smooth and silky texture- directly from Japan and uses an automated gyoza machine to ensure that every dumpling has a consistent amount of filling and a proper wrap. Whether or not that contributes to the quality of the gyoza, I can’t say for sure.

While they had variety, the gyoza’s didn’t pass the quality check. The sear wasn’t properly done, resulting in a lacklustre texture. Nothing hurts me more than soggy gyozas. The filling wasn’t bad, but I would’ve preferred more depth of flavour.

The toppings weren’t too impressive either, with a salty mentaiko sauce and a cheese sauce that dries up way too quickly.

The Garlic Fried Rice was paled in comparison with the one I had at Koh’s Grill. Not only was it not as aromatic, it was also slightly more expensive.

Verdict

Now, I do get that the highlight of Gyoza-ya is probably the variety of flavours. It’s a contemporary concept, introducing crowd-pleasers such as mentaiko and mala. Thus, it’s unfair to focus on the quality of the gyoza itself. If I wanted a textbook gyoza I could’ve gone to a more traditional restaurant. However, even the sauces weren’t done properly. The cheese dried too quickly and the mentaiko was too salty. Dumpling Darlings would’ve been a better choice for contemporary dumplings, considering they get both the texture and flavours right.
