Superior Treasure Pot served with 15 ingredients

Celebrate the dawn of new beginnings at Pan Pacific Singapore’s Hai Tien Lo.

From 19 December 2022 to 5 February 2023, their new Executive Chef, Ricky Leung, has prepared a selection of eight Chinese New Year (CNY) set menus from $128 per person.

Hai Tien Lo Meteoric Success Menu

At $398 per person, the Meteoric Success Menu comprises seven different courses.

Start the meal by howling CNY greetings over a plate of Yu Cheng with Lobster, Whole Abalone, Smoked Salmon and Silver Fish. There was a good balance of sugar and tang, and it was a light and refreshing first course for an indulgent meal. Aside from the seafood (which everyone was eyeing), there was also a unexpected secret ingredient present in the yusheng. I won’t spoil it for you though.

Next comes the Double-boiled Fish Maw with Bamboo Pith and Dried Scallops in Fish Bone Broth. It was super rich and creamy, and loaded with ingredients.

This was my favourite dish of the meal

If you think the meal can’t get any more lavish, the next dish features a two-headed abalone. A Chinese banquet classic, the Braised Fresh Abalone with Dried Oyster, Bean Gluten and Seasonal Vegetables was cooked to perfection.

A generous portion of abalone that was bestowed with a soft chewy texture, absorbing every bit of the braising liquid for a flavourful bite. The intense briney notes of the dried oyster on the side was also delightful.

Chef Ricky’s signature dishes

Chef Ricky presents his prideful creations in a brand new manner for CNY.

A popular Cantonese dish from the 80s, the bones and flesh are removed from chicken wings, leaving the skin perfectly intact to stuff it with bird’s nest.

Although fried, the chicken wing remained light and appetising. Perhaps, it was due to the addition of the briney fresh crab meat and salty dried scallops.

The intensity of the dishes tamped down as the Stewed Indonesian Lobster with Inaniwa Udon in Superior Stock was served as the last entree. Just like the stuffed chicken wings, this was one of Chef Ricky’s first creations since he took the helm of Hai Tien Lo’s kitchen.

Hai Tien Lo’s superior stock is the definition of the perfect stock. It’s creamy, perfectly seasoned, comforting… It’s paired with two to three chunks of lobster and a smooth inaniwa udon. While satisfying, I preferred the rendition with chopped kimchi. Not only could it restore balance to the heavier flavours of the previous dishes, but its acidity also lifted the mellower, deeper notes of the stock.

Two desserts to end the meal

The almond egg white dessert was amped up with Imperial Swiftlet’s nest, and doubled boiled in a young coconut. While slightly milky, it was a good palette cleanse.

The last dessert elevates the traditional nian gao, with ground nuts and shredded yam. Surprisingly, it was still delectable even though I was completely filled up from the previous dishes.

The Meteoric Success Menu is Hai Tien Lo’s second most luxurious set menu in 2023, and it requires a minimum order of two pax.

Pen Cai (Poon Choi)

Synonymous with abundance and good fortune, indulge in Hai Tien Lo’s Pen Cai.

The Classic Treasure Pot ($338, serves up to six / $538, serves up to ten) features: eight-head whole abalone, bird’s nest, sakura chicken, dried scallops, wontons, and broccoli

Meanwhile, the Superior Treasure Pot ($598, serves up to six / $938, serves up to ten) features 15 stellar ingredients: eight-head whole abalone, dried oyster, sea cucumber, dried fish maw, pork knuckle, lobster, dried scallop, roast duck, homemade fish bean curd, bean gluten, Chinese mushroom, black moss, sliced lotus root, and Yunnan golden ear mushroom.

Hai Tien Lo’s Pen Cai are available for both dine-in from 6 January to 5 February 2022, and takeaway from 27 December 2022 to 5 February 2023.
