Helmed by Michelin star holder Alvin Leung, 15 Stamford by Alvin Leung has partnered with Kempinski Hotel Corvinus Budapest’s Executive Chef Peter Bardos of to craft an exclusive menu for Hungarian Gourmet Week.

Located at The Capitol Kempinski Hotel Singapore, the specially-crafted lunch and dinner set menus during the Hungarian Gourmet Week starts from $68.

3-course lunch set

We started the meal with the Duck Foie Gras Terrine with Tokaj wine marinade, green walnuts, and brioche for our starter, a rich and decadent delicacy that is sure to please even the most discerning palate. We enjoyed the buttery texture and melt-in-your-mouth flavor that was unforgettable upon the first bite.

Tokaj wine is known for its complex flavour profile, which includes hints of honey, apricot, and caramelised sugar, as well as a distinct acidity that cut through the fatty richness of the foie gras, creating a harmonious balance of flavours. Served with a crispy slice of brioche toast and a dollop of sweet and tangy jam, treat yourself to a luxurious and indulgent culinary experience.

The Mangalitsa Tenderloin “Brassó Style”, served with peas, confit potatoes, morel, and romano, is inspired by Brassó, a city in Transylvania. It is created with a unique blend of spices and herbs that infuse the meat with a rich and complex flavor.

Some may find that the texture is a bit on the drier side. However, the dish is delightfully balanced and served with a side of green peas that added some crunch, as well as confit potatoes that are cooked slowly to create a crispy exterior and a soft and buttery interior. The morel mushroom that comes with a honeycomb texture is rich in umami flavour, adding depth and complexity to the overall dish.

We ended the meal with the Sponge Cake Somlói, a traditional Hungarian dessert that is known for its delicate layers of light sponge cake. Each layer is infused with a subtle vanilla flavour, and creamy Hungarian trifle that has a slight tang and a hint of rum.

To finish off this delectable dessert, a rich luscious chocolate sauce is generously drizzled, enveloping the cake in a velvety coating of luscious chocolate goodness. The raisins infused with rum enhanced the cake with a boozy flavour that packed a punch.
