What is siphon coffee, why is siphon coffee so popular in Bangkok cafes

Us cafe hoppers visit cafes for a multitude of reasons. It could be the Instagrammable interior, the basic brunch dishes, just the aesthetics in general. But for me, it’s got to be about the coffee.

There’s no better place for coffee in Bangkok than host X AMBER, a cafe that’s run in collaboration with AMBER, the Top 4 World Barista Champion.

host X AMBER is conveniently located on the first floor of Zen Department Store at Central World; also a ten minute walk from Platinum Fashion Mall. There’s a misconception that cafes in malls tend to be generic. While it’s not as fancy as floral cafes or vintage cafes, it’s cosy, clean, and modern. Not to mention its floor-to-ceiling window which provides the best lighting for photos.

What is syphon coffee?

If you’re cafe hopping in Thailand, you’ll be bumping into syphon coffee a lot. It’s not as common in Singapore, but don’t be intimidated. The coffee brewed in a siphon is very similar to that of a drip. The flavours from a siphon coffee are just richer and fuller, and it’s what I personally prefer.

It’s also nice to watch the baristas prepare a siphon since it’s rarely found in Singapore. Basically, the water from the bottom chamber is forced into the top where the coffee grounds are. Coffee is extracted from the grounds before it flows back to the bottom chamber, leaving the grounds behind.

So what does the Top 4 Barista Champion have to offer? I’d say some of the best single origins I’ve had.

Here’s the full list in December 2022:

  • Yunnan Anaerobic: strawberry, cherry, red wine
  • Ethiopia Hambella: mix berries, candy
  • Ethiopia Washed: banana, durian, jack fruit
  • Medium Dark Columbia: dark chocolate, vanilla, roasted almond
  • Dark Santos: dark chocolate, hazelnut, berries
  • El Paraiso SSS: strawberry, lychee, dark chocolate
  • Lychee Castillo: floral, lychee, strawberry 

It’s definitely not just a title. The coffee was perfectly roasted (of course, credits to the baristas for the perfect brew).

The Ethiopia Washed had a potent jack fruit aroma, with a light sweet banana finish.

For sweeter coffees, we recommend their signature Amber (450 baht). Gesha coffee, roasted by AMBER, mixed with pineapple juice and smoked earl grey tea. While slightly pricier, this was an experience that only host X AMBER could provide.
