One of the pioneers of seafood soup in Singapore, Yanji Seafood Soup opens its new outlet in Bedok.

Is it worth the hype?

The family-run business has built up its reputation with its delicious seafood broth — a concoction of old hen, pork ribs, Chinese ham, Japanese scallops — slow-cooked for six hours.

“Our cooking techniques are long and arduous and it’s not for everybody, but that’s what it takes to produce the natural but robust flavours of seafood soup. Providing value and focusing on flavours over seasoning was my father’s mantra, and he was uncompromising in his approach towards cooking.”

– Chia Tok Whee, youngest son of the Chia Chioh Koh, founder of Yanji Seafood Soup

Over the 40 years, the family recipe has witnessed multiple changes, such as the addition of their special minced pork that is mixed in with bits of dried mushroom and dried sole fish for an added touch of umami. This might be unconvincing, but the minced meat was the highlight of the seafood soup.

Recently, the broth has also been watered down (but not necessarily in a bad way). When I had my first taste of Yanji Seafood Soup at their Marsiling outlet, the broth was thicker and creamier, but also much saltier. Meanwhile, the variation I had in Bedok had a clearer broth, and was significantly less salty, which was what I preferred.

Honestly, it was a really comforting bowl of soup for its price.

We ordered their best-selling Dory Seafood Soup, which comprises of a handful of prawns, fish slices, and minced pork.

A more premium option is the Crayfish Seafood Soup with Red Grouper ($18), which is similar to the Dory Seafood Soup, but with crayfish and red grouper slices instead.
