In the latest episode of the Kardashians, Kendall Jenner prepared her favourite cucumber salad snack when she was visiting her mother. The clip went viral, as Netizens poked fun at her unorthodox method of slicing the cucumber.

Jokes aside, this scene had not only riled up professional chefs, but it had also sparked a conversation about privilege. But, that’s not what we’re focusing on.

After scouring the internet for hours, and trying out a couple of recipes, we have found five simple cucumber salad recipes for you to try this weekend.

There are many variations of cucumber salads and this is a popular one that originated from China. It is doused in soy sauce, rice vinegar, chili oil, sesame oil, sugar, minced garlic, sesame seeds and green onion.

Christie, who specialises in Asian recipes, took an extra step by making it more presentable by slicing them partially in two directions, creating an accordion shape. Presentation aside, this method gives it an interesting texture and enhances its flavour, with a larger surface area to mop up the dressing.

However, you could also slice them or smash them to speed up the process.

It’s important to salt the cucumbers to remove its moisture, and rinsing away the salt, to enhance its taste and bestow a crunchier texture. This step is vital for the following recipes.

Recipe (for 6 mini cucumbers)

  • 2 tbsp regular soy sauce
  • 1.5 tbsp sesame oil
  • 1 tbsp Chinese black vinegar
  • 1/2 tbsp sesame seeds
  • 1 tbsp white granulated sugar
  • 1 clove minced garlic
  • 1 tbsp Chinese chili oil

2. Spicy Cucumber by Chef Chris Cho

Korean-American chef Chris Cho injected his own culture by adding gochugaru and gochujang– Korean pepper flakes and red chilli paste- and Korean fish sauce. It’s very similar to oi munchim, a common Korean side dish.

Recipe (for 2 cucumbers):

  • 2 tbsp gochugaru
  • 1 tbsp sugar
  • 1 tbsp fish sauce
  • 1 tbsp sesame oil
  • 1.5 tbsp apple vinegar
  • 1/2 tbsp minced garlic
  • 50g onions
  • 1/2 tbsp gochujang (optional)
  • 1/2 tbs sesame seeds (optional)

3. Sweet and Sour Cucumber Strips by Wayne Shen

TikTok food creator Wayne Shen is known for his signature ingredient in his recipes- water from the Mississippi river.

Shen prepares this cucumber dish in long thin slices before adding lemon slices, chopped red chili, sugar, salt, vinegar, and interestingly, sprite. Using a mandoline will help with the long slices. Otherwise, you could just stick with the cross-sectional slices.

Recipe (for 2 cucumbers):

  • 3 pieces lemon slice
  • 2 tsp chopped red chili
  • 1 tsp white granulated sugar
  • 1/2 tsp salt
  • 2 tsp vinegar
  • 200ml Sprite

4. Cucumber and Melon Salad with Chile and Honey by Claire Saffitz

This is when things start to get slightly more complicated. But it’s worht the effort.

Claire Saffitz from bon appétit, injects Mediterranean elements into the dish. On top of sliced cucumbers, Saffitz toasted some chopped pisatchio and shaved honeydew, topping it off with Fresno chile and feta, and a drizzle of extra virign olive oil for a light, yet complex-tasting salad.

One of the readers said that this salad was the definition of summer, with its bright flavours.

Recipe (for 1 cucumber):

  • 1/4 honeydew melon/ cantaloupe
  • 1/4 cup pistachios
  • 1/2 Fresno chile/ jalapeño
  • 1 tsp honey
  • 1 tbs extra-virgin olive oil
  • 2 tbs ricotta salata/ feta
  • 1/2 cup basil leaves

5. Green Goddess Salad by Baked by Mellissa

If you’re looking for variety in your salad, Mellissa’s Green Goddess Salad will be perfect.

On top of cucumbers, this dish calls for lettuce and red onion; all cubed evenly. But the star of this salad is the dressing, blended with nuts, nutritional yeast, aromatics, lemon juice, olive oil, spinach and basil.

This is vegan recipe took the Internet by storm, even catching the attention of Chef Aarón Sánchez, a MasterChef Judge.

Recipe (for 3-4 mini cucubers):

  • 1 small head of cabbage
  • 1/4 cup chives
  • 3-4 mini cucumbers
  • 1 bunch green onions/ scallions


  • 2 cloves garlic
  • 1 small shallot
  • 2 lemons, juiced
  • 1/4 cup olive oil
  • 1/4 cup nuts of choice
  • 1/3 cup nutritional yeast
  • 2 tbs rice vinegar
  • 1 tsp salt
  • 1 cup fresh spinach
  • 1 cup basil leaves
  • extra chives (optional)
