$20 for a platter or eggs? I’ll cry.

Eating out can be expensive, especially when we’re talking about brunches at cafes. Hence, if you’re planning to satisfy your cravings without breaking the bank, we’ve got just the thing for you.

Here are eight breakfast and brunch dishes that you can easily make in your kitchen.

What are some easy recipes to make at home?

1. Korio-inspired Grilled Cheese

Ingredients (for 2 people):

  • 4 pcs of sourdough
  • 1/2 onion
  • 1.5 tbsp sugar
  • 1.5 tbsp balsamic vinegar
  • 4 slices of American cheese
  • 2 cup of Sharp Cheddar

Steps

  1. On medium-low heat, oil up your frying pan and throw in your thinly-sliced onions.
  2. After the onions soften (they’ll look slightly translucent), add the sugar and balsamic vinegar and let the onions cook in the pan for 30 minutes on low heat.
  3. Stack up your sandwich with the cheese. You can use any ratio and type of cheese but we used American and cheddar for a gooey texture and an extra hint of savory.
  4. On low heat, grill the sandwich on both sides until brown.

2. Brown Sugar Bacon Grilled Cheese

Ingredients (for 1 person):

  • 2 pcs of sourdough
  • 1 tbsp brown sugar
  • 25g butter
  • 3 slices of bacon
  • 2 slices of American cheese
  • 1/4 cup cheddar

Steps:

  1. On high heat, fry up your bacon. I personally like the bacon super crispy so I leave it in the pan for at least 5 minutes.
  2. Mix 1 tbsp of brown sugar with 25g of softened butter and apply it on both sides of the bread.
  3. Stack up your sandwich with the cheese. You can use any ratio and type of cheese but we used American and cheddar for a gooey texture and an extra hint of savory.
  4. On low heat, grill the sandwich on both sides until brown.

3. Avocado Toast

Ingredients (for 3 people):

  • 3 pcs of brioche
  • 1 avocado
  • ½ tsp lemon juice
  • Salt & pepper to taste

Steps:

  1. Shove your slices bread in the toaster until brown (about 5 minutes).
  2. While waiting, slices up and avocado and add in lemon juice, salt and pepper. Mash it with a fork (I use a weird tool that I have in my kitchen). Feel free to change the quantity of lemon juice to suit your palate. But 1/2 tsp is just enough to bring out the flavor of avocado without it being too tangy.
  3. Spread the avocado paste on the bread (easy).

4. Egg Benedicts (3 ways) ham, smoked salmon, avocado

Ingredients (hollandaise for 5 slices of toast):

  • 90g melted butter
  • 2 egg yolks
  • 1/4 tsp lemon juice (or more to taste)
  • Salt to taste

Steps:

  1. There are numerous methods to poach an egg. But due to poor quality of eggs that I have, I choose to use Jamie Oliver’s cling wrap method. Oil up a big piece of cling wrap and place it over a small bowl
  2. Then, crack an egg and tie the cling wrap up, ensuring there are no air bubbles in the cling wrap
  3. Poach the egg in boiling water for 6 minutes and leave to cool in iced water to prevent over cooking.
  4. For the hollandaise, whisk the egg yolks and lemon juice in a heat-proof bowl over a double boiler until slightly thickened.
  5. Add a few drops of butter and whisk till homogenized.
  6. Slowly drizzle in the melted butter and whisk consistently to ensure the egg yolk and butter doesn’t split until the sauce is thick and glossy. One good way to gauge is to see if it coats a metal spoon evenly
  7. Add salt and lemon juice to taste.
  8. For the toppings, you can choose literally anything you want: bacon, prosciutto, avocado, smoked salmon, roasted mushrooms etc.

5. Dalgona coffee

The dalgona coffee is perfect for those who don’t have an espresso machine, V60 or French press at home, but still want to elevate their instant coffee experience.

Ingredients (for 1 person):

  • 1 tbsp instant coffee
  • 1 tbsp water
  • 1 tbsp sugar
  • 200ml milk

Steps:

  1. You’re not living in this generation if you haven’t made a cup of dalgona coffee yet
  2. Unless you’re a Tiktoker who wants clout, we highly recommend using an electric whisk to whisk all ingredients together until a thick consistency.
  3. Those without an electric whisk can try adding a metal aluminum ball in a bottle and shake it up

6. Avocado milkshake

Ingredients (for 2 people):

  • 1 avocado
  • 1 banana
  • 1.5 cup milk
  • ½ cup oats

Steps:

  1. Blend everything together (easy).
  2. Using a ripe banana should be sufficient to bring out avocado but if your milkshake is not sweet enough, you can add in 1 tbsp of honey.

7. Granola with Greek Yogurt

Ingredients (for 1 person):

  • 1 packet of Greek Yogurt (250ml)
  • ¼ cup of Granola
  • ¼ cup of fruits

Steps:

  1. I mean… it’s literally just throwing all the ingredients together. But here are the brands of yogurt and granola I use: Farmers Union Greek Style Yogurt – Honey and Nestle Fitnesses Granola Oats – Honey.

8. French Toast

Ingredients (for 4 slices):

  • 4 slices of brioche
  • 2 egg
  • 1 egg yolk
  • 110ml milk
  • 1.5 tbsp brown sugar
  • 1/2 tsp nutmeg/cinnamon (optional)
  • Maple syrup/ butter for topping

Steps:

  1. Whisk the eggs, milk, brown sugar and nutmeg/cinnamon (or both) together in a plate or bowl.
  2. Soak your brioche (any stale bread will do though) in the egg mixture for 1 minute on both sides. Just ensure that the bread is thoroughly soaked. I slice my bread about 1″ thick.
  3. On low heat, butter up the pan and grill the toast for 5 minutes each on both sides. Feel free to add a teaspoon of brown/white sugar on the toasts to caramelise it.
  4. Drizzle your maple syrup and a add a knob of butter to finish it off.
