Flat lay of brunch dishes at The Brewing Ground, one of the best cafes in East Coast

The word brew refers to the steeping of coffee and tea, the fermentation of beer, and the cultivation of friendships.

Inspired by the multiple definitions of ‘brew’, The Brewing Ground serves one of the best brunches in Singapore.

It is located at The Yards along Joo Chiat Place, an all-inclusive learning environment focused on arts, dance and drama.

Brunch from 10am

Sick of plain old eggs benedict? Dump him and give Eggs Benjamin ($21) a shot.

The Brewing Ground’s unique version of the classic brunch dish starts of with 63 degrees sous vide egg instead of poached. In replacement of hollandaise, beurre blanc is used. While both are French butter-based sauce, beurre blanc has a more complex flavour, as it is first prepared with a reduction of wine, vinegar and shallot before butter is added, while hollandaise is just an emulsification of egg yolks and butter.

Diners are allowed to choose between thick-cut maple bacon and king oyster mushrooms. The bacon was tender, and perfectly balanced. I liked how it wasn’t too salty, unlike store-bought bacon.

For something a little less rich, and a little more briney, we recommend the Crab & Signature Scrambled Eggs on Toast ($25). Toasted sourdough topped with creamy scrambled eggs, sautéed crabmeat, and ikura. While this is one of the pricier items on the menu, a generous portion of crabmeat was served.

Oddly, the highlight of the dish was the spread of lime cream, which accentuate the freshness of the seafood.

Breakfast from 8:30am

The Burrata & Tomatoes Tartine ($18) comes in a generous and filling portion. A thick, one-inch slice of toasted sourdough, smothered in a bed of quality, creamy burrata, and topped with marinated cherry tomatoes and caramelised onions. It’s rich, it’s tart, and it’s sweet. But that’s not where it ends.

A drizzle of balsamic glaze and basil oil adds fruity and herbaceous notes. The cherry on top, or more accurately, the almond flakes, added a layer of texture.

For those who are looking for a smaller portion, especially those who don’t have the habit of eating breakfast, you can either get a pastry, or Build Your Own Breakfast.

From $8, it comes with two slices of toasts and two eggs. Diners can choose between sourdough and brioche, and among scrambled, sunny side up, over-easy, and sous vide. Add ons include hash browns, smoked salmon, sausages, and more.

Additionally, The Brewing Ground’s menu includes mains, salads and desserts.

Brewed with oat milk, the maltiness of the Cold Brew White ($8.5) pairs well with the sweet and nutty profile of their coffee.

The Brewing Ground’s al fresco dining area is pet-friendly.
