What happens when a viral Korean restaurant group opens a full-fledged Italian pasta bar?

Founded by the team behind popular Korean eateries in Singapore — Bakery 1946, Yoon Yeong Dang, Seoul Noodle Shop, and more — the group takes a bold step forward with their first Italian concept.

Noci Pasta Bar serves freshly-made pizza and pasta at Suntec City.

Our review of Noci

We were doubtful at first. I mean, we knew they’ve nailed every single Korean restaurant they’ve opened in Singapore. But Italian’s a completely different thing.

But, they did make a first good impression.

Pasta restaurant at Suntec — Noci interior

Noci’s location at the end of Suntec City, closer to Marina Sqaure’s side, blessed them with nice natural sunlight that streams in through their floor-to-ceiling windows. It almost feels like a cafe in Korea.

Next, we also found out that they make their own pasta and dough from scratch, while importing their ingredients from Europe.

How was the pasta?

We tried their Truffle White Ragu ($27) and Ricotta Ravioli ($24).

Even though the Truffle White Ragu looked bland, it was actually really flavourful.

Similarly, the Ricotta Ravioli had nice bright colours, probably thanks to the addition of peas and lemon juice and zest.

Although tasty, I did wish there were more ingredients for both pasta dishes.

The must-gets

Ricotta Crostini

Literally just whipped ricotta on toast, but don’t be deceived by how simple this dish looks.

The ricotta was somehow both light and rich at the same time, and was perfectly smooth — no weird granular texture that you’d usually get from ricotta.

Salsiccia Pizza made with Foccacia dough

Their Salsiccia ($23) was also fabulous. The perfect balance of flavours on a slice — the punchy savoury flavours from their handmade salsiccia, a fresh Italian sausage, the creaminess from stracciatella, the tang from the olive, and the sweetness from the tomato sauce.

The dough was the true MVP of this dish though. Turns out, it’s not even pizza dough. After sending my many compliments to the chefs, they admitted that they actually use focaccia dough instead, which explains the airier, drier texture.

Don’t forget the desserts

Tiramisu at Noci Pasta Bar

Noci Pasta Bar also nailed the classic Tiramisu ($12). Nothing much to comment on — just a well-executed traditional tiramisu.
